Taboulé au quinoa
Pour 4 personnes
1 verre de quinoa
2 verres d’eau
Sel, poivre
4 gros bouquets de persil
4 tomates
2 petits oignons nouveaux
1 citron
Huile d’olive
Rincez les graines de quinoa. Mettez-les dans une casserole, ajoutez l’eau, salez.
Portez à ébullition, baissez le feu et laissez frémir, environ 15mn, jusqu’à ce que le liquide soit absorbé.
Les graines se sont ouvertes, laissant apparaître leur germe. Laissez refroidir.
Pendant ce temps, lavez parfaitement le persil, et ciselez- le très finement, à l’aide d’une paire de ciseaux. Réservez-le.
Trempez rapidement les tomates dans l’eau bouillante, épluchez-les, ôtez le jus et les pépins, coupez la chair en tout petits dés.
Dans un grand saladier, mettez le quinoa, le persil, les tomates, les oignons émincés, le jus du citron, 2 cuillerées d’olive, du poivre. Remuez, vérifiez l’assaisonnement. Ajoutez sel et huile d’olive si nécessaire.
Mettez au réfrigérateur une heure avant de servir.
